Hokey Pokey Honeycomb
Perfect for Hokey Pokey Day, otherwise known as bonfire night.
Ingredients
200g Caster Sugar
5 Tbsp Honey or Golden Syrup
2 Tsp Bicarbonate of Soda
Directions
- Line a 20cm square tin with oiled baking paper
- Stir together the honey and sugar in a deep saucepan and slowly heat until the sugar has melted
- Turn up the heat and simmer the mixture until it turns a caramel colour and remove from heat
- Use a wooden spoon quickly stir in the bicarbonate of soda and then pour into the prepared tray
- The mixture will continue to bubble in the tray
- Leave the mixture to set and then break gently with your hand or the back of a wooden spoon
- Store in an airtight container
