Hokey Pokey Honeycomb

Perfect for Hokey Pokey Day, otherwise known as bonfire night.

Ingredients

  • 200g Caster Sugar

  • 5 Tbsp Honey or Golden Syrup

  • 2 Tsp Bicarbonate of Soda

Directions

  • Line a 20cm square tin with oiled baking paper
  • Stir together the honey and sugar in a deep saucepan and slowly heat until the sugar has melted
  • Turn up the heat and simmer the mixture until it turns a caramel colour and remove from heat
  • Use a wooden spoon quickly stir in the bicarbonate of soda and then pour into the prepared tray
  • The mixture will continue to bubble in the tray
  • Leave the mixture to set and then break gently with your hand or the back of a wooden spoon
  • Store in an airtight container
